<mods:mods xmlns:mods="http://www.loc.gov/mods/v3" xmlns:xlink="http://www.w3.org/1999/xlink" xmlns:xsi="http://www.w3.org/2001/XMLSchema-instance" xsi:schemaLocation="http://www.loc.gov/mods/v3 http://www.loc.gov/standards/mods/v3/mods-3-7.xsd"><mods:titleInfo><mods:title>Using Community-Based Participatory Research to Create a Healthy Latinx Cookbook for Progreso Latino: Baseline Data</mods:title></mods:titleInfo><mods:abstract>Background: In Central Falls, RI, where 67% of the population identify as Hispanic, there is a disproportionate burden of chronic diseases like obesity and type 2 diabetes. The Progreso Latino Wellness Center, a non-profit health and socioeconomic-promoting organization in Central Falls, identified the need for a healthy, affordable, culturally appropriate, Spanish-language cookbook for its members. &#13;
Methods: Through a mixed-methods community-based participatory research study, we are seeking to identify facilitators and barriers to health eating, develop a healthy Latinx cookbook, and measure differences in dietary patterns pre- and post- receipt of the cookbook. We will employ 3 validated surveys to measure cooking self-efficacy and dietary habits in the Progreso Latino Diabetes Management, Chronic Pain, and Seniors groups.&#13;
Results: We collected baseline data (n=12). 100% of participants report liking to eat fruits and vegetables, but only 50% report eating vegetables the day prior. 83% report that the fruits and vegetables they like are too expensive and go bad too quickly.&#13;
Conclusion: In the preliminary surveys assessing dietary habits and cooking self-efficacy, participants unanimously report liking to eat fruits and vegetables but report barriers to doing so. These barriers include cost and that produce goes bad too quickly.
